Apples & Pears were co-fermented in the fall of 2021 and aged in older French oak barrels.
Then in the early Summer of 2022 they blended in around 10% of Picpoul Blanc from Windmill Vineyards, then bottled the fruit wine with a bit of freshly pressed apples for a bit of carbonation.

“Feels like drinking apple cider mixed with prosecco but with a funky finish. A little dry on the tongue and slightly acidic. Pairs well with manchego, aged goudas and cambozola.”
