Gewurztraminer grapes, meticulously handpicked and sorted during harvest, undergo a 12-day maceration as whole bunches, a process known as natural carbonic maceration. This is followed by a gentle pressing. The wine then matures for 9 months in both foudre (large wooden casks) and stainless steel tanks. This process culminates in another legendary orange wine produced by Les Vins Pirouettes.
