100% Cabernet Franc Jour de Soif is made from 100% Cabernet Franc from 20 year old vines. Harvest is manual, as is sorting the grapes once they arrive in cellar. They de-stem the grapes prior to an indigenous yeast fermentation, temperature controlled, for about 6 days in stainless steel. They use 100% free-run juice (not pressed) and age the wine in tank for 6-8 months. It is bottled unfiltered. An absolute basket of red fruits and flowers with a hedonistic juicy side, this wine gives a noble character to what has been called the true “thirst quenching wine”.
