Our aim is to build long-term sustainability into our soils and vines, to obtain the best possible grapes, that reflect the térroir, with minimal mechanical and chemical intervention. We invest in manual labour where possible, to avoid soil compaction, and we manage our grass cover to reduce erosion during wet periods, while avoiding excessive water competition during the dryer months. We have been organic methods since 2003. We have been members of the Natural wine association “Vinnatur” since 2010 and we commit to constantly moving towards more natural and sustainable methods. Our predominant grape variety is Sangiovese, with other local varieties including Canaiolo, Colorino and Ciliegiolo. They are trained and pruned following in the Guyot system. We hand pick each variety separately at the optimum time of maturation.
80% Sangiovese, 20% Canaiolo from 3km outside Siena. Each variety was separately destemmed and crushed. After 4 hours of maceration, pink juice was bled off of each tank and a blend was made. This is textural, medium-deep in color, and extremely Tuscan. 3,000 bottles made. Certified organic.
