THE TEMPRANILLO FROM DUTTON VINEYARD IS ARGUABLY SOME OF THE BEST HIGH PLAINS FRUIT WE RECEIVE EVERY YEAR. UNCONVENTIONALLY, WE PUT THIS FRUIT THROUGH CARBONIC MACERATION (IN MACRO BINS, FERMENTATION UNDER CO2). WE TAKE THE EXTRA TIME AND COST TO HAND-HARVEST THIS VINEYARD BECAUSE OF THE IMPACT ON QUALITY. ADDITIONALLY, CARBONIC MACERATION REQUIRES UNBROKEN BERRIES AND FRUIT ON STEM.
THE RESULTANT WINE IS BOTH UNCONVENTIONAL IN PROFILE BUT CONSISTENT. EVERY VINTAGE OF TEMPRANILLO NUEVO TAKES ON DEEP UMAMI NOTES BEHIND HEAVY ORANGE PEEL AND MULLED CRANBERRY FLAVORS. THIS VINTAGE ALSO CARRIES STRONG MINERAL NOTES, IN FLAVOR AND AROMA – LIKELY TIED TO THE SAND AND CALICHE SOIL OF THE VINEYARD.
